食品生物胺阵列传感技术研究进展

食品中生物胺过量可能引发严重的健康问题,甚至危及生命。为此,对生物胺进行实时监测与精准评估非常重要。当前主要采用高效液相色谱法(HPLC),该分析技术耗时耗力,样品前处理过程繁琐费时,已不能满足现代食品工业对快速检测、实时监控的需求。随着食安监管领域对快速筛查技术及便携式设备应用需求的显著提升,实验室依托型检测模式在时效性约束与经济效益比方面的不足正成为制约因素。因此,建立准确灵敏、快速可靠的食品生物胺检测方法,为保障食品安全提供有效手段,具有重要的意义和价值。本文综述了食品生物胺的危害及检测技术现状,基于SERS的高灵敏度和传感器阵列的多维响应特性,构建了具有多目标识别能力的检测体系,为食品生产过程中生物胺的快速检测与精准控制提供了创新性技术手段。

Excessive levels of biogenic amines in food may induce severe health risks, including life-threatening conditions. Therefore, real-time monitoring and precise assessment of biogenic amines are critically important. Current methodologies predominantly rely on HPLC, an analytical technique characterized by time- and labor-intensive procedures, as well as complex and prolonged sample pretreatment, which fails to meet the growing demands of the modern food industry for rapid detection and real-time monitoring. With the escalating need for rapid screening technologies and portable devices in food safety regulation, laboratory-dependent detection modes are increasingly constrained by time efficiency limitations and suboptimal cost-effectiveness ratios. Consequently, the development of accurate, sensitive, rapid, and reliable methods for detecting foodborne biogenic amines holds significant importance in ensuring food safety. This article reviews the hazards of biogenic amines in food and the current status of detection technologies. Leveraging the high sensitivity of SERS and the multi-dimensional response characteristics of sensor arrays, a detection system with multi-target identification capability was constructed, providing an innovative technical approach for rapid detection and precise control of biogenic amines during food production.
