贡眉与牡丹白茶的代谢组学分析和抗氧化活性研究

白茶作为中国六大传统茶类之一,具有多种药理活性和健康促进作用,但其化学成分与生物活性的关系尚未完全明确。本研究采用非靶向和靶向代谢组学技术系统分析了贡眉(GM)和牡丹(MD)两种白茶样品的挥发性及非挥发性化学成分,并评价了它们的体外抗氧化活性。结果表明,GM的总多酚和多数氨基酸含量高于MD。非靶向代谢组学共鉴定出1963种代谢物,其中119种在GM和MD间存在显著差异,主要富集于黄酮类(38种)、酚酸及其衍生物(22种)和萜类(11种)等。靶向黄酮类分析进一步验证了两种茶在关键黄酮成分上的差异。体外抗氧化实验(DPPH, ABTS, FRAP)显示,GM和MD均表现出较强的抗氧化能力,且GM活性更优。相关性分析揭示特定黄酮类物质与抗氧化活性密切相关。本研究阐明了GM与MD白茶在代谢物层面的主要差异,并将其与抗氧化活性相关联,为白茶资源的高值化利用提供了理论依据。

s one of the six traditional tea categories in China, white tea possesses various pharmacological activities and health-promoting effects. However, the relationship between its chemical composition and biological activity remains incompletely understood. In this study, both untargeted and targeted metabolomics approaches-combining HS-SPME/GC-MS and UPLC-MS/MS-were employed to systematically analyze the volatile and non-volatile chemical constituents of two types of white tea, Gongmei (GM) and Mudan (MD), along with an evaluation of their in vitro antioxidant activities. The results showed that GM contained higher levels of total polyphenols and most amino acids compared to MD. A total of 1,963 metabolites were identified through untargeted metabolomics, among which 119 showed significant differences between GM and MD. These differential metabolites were mainly enriched in flavonoids (38), phenolic acids and their derivatives (22), and terpenoids (11). Targeted flavonoid analysis further validated the differences in key flavonoid components between the two teas. In vitro antioxidant assays (DPPH, ABTS, FRAP) demonstrated strong antioxidant capacities in both GM and MD, with GM exhibiting superior activity. Correlation analysis revealed that specific flavonoids were closely associated with antioxidant activity. This study elucidates the major metabolic differences between GM and MD white teas and links these differences to their antioxidant properties, providing a theoretical basis for the high-value utilization of white tea resources.
