厚皮甜瓜果实重金属富集分布特点分析

摘要
本研究以"阜甜9号"厚皮甜瓜为试材,采用外源浸泡方法探究重金属镉(Cd2?)和铜(Cu2?)在果实不同深度果肉中的富集分布特征。结果表明,两种重金属在甜瓜果肉中均呈现非均匀分布。Cd2?在果皮表层(0 mm)富集最高(48.73 mg/g),随深度增加至13.5 mm含量逐渐降低至最低值(43.22 mg/g),但在深层近果核区域(18-22.5 mm)含量再次显著上升,最高达59.78 mg/g。Cu2?同样在表层富集最高(243.56 mg/g),随深度增加急剧下降,13.5 mm处最低(87.28 mg/g),深层略有回升但仍低于表层。研究显示,果皮是重金属富集的主要部位,中间果肉富集最低,而Cd2?在近核区域存在二次富集现象。建议食用甜瓜时去除果皮与近核部分,以降低重金属摄入风险,这符合我国厚皮甜瓜的常见食用习惯,具有较好的生产指导与重要的食品安全意义。
Abstract
This study investigated the accumulation and distribution characteristics of heavy metals cadmium (Cd2?) and copper (Cu2?) in the flesh at different depths of \'Futian 9\' muskmelon fruits using an exogenous immersion method. The results showed that both heavy metals exhibited non-uniform distribution within the fruit flesh. Cd2? accumulation was highest at the peel surface (0 mm, 48.73 mg/g), gradually decreased with increasing depth to a minimum at 13.5 mm (43.22 mg/g), but then increased significantly in the deeper flesh near the core region (18-22.5 mm), reaching a peak of 59.78 mg/g. Similarly, Cu2? accumulation was highest at the surface (243.56 mg/g), decreased sharply with depth to a minimum at 13.5 mm (87.28 mg/g), and showed a slight recovery in deeper layers, though still lower than the surface level. The study indicates that the peel is the primary site for heavy metal accumulation, with the middle flesh having the lowest accumulation. Notably, Cd2? exhibited secondary accumulation near the core. It is recommended to remove both the peel and the core-adjacent flesh when consuming muskmelon to reduce heavy metal intake. This practice aligns with common consumption habits for thick-skinned melons in China and offers practical guidance for production and food safety.关键词
