摘要
辛弗林是一种在食品或食品原料中既天然存在(内源)又可能人为非法添加(外源)的成分,由于缺乏快速高效对辛弗林产品内外源区分,导致这类成分添加行为的合法性和非法性界限模糊。为了对减肥类产品中辛弗林的非法以及超限添加进行精准识别,本研究开发了一种对合成和天然辛弗林进行鉴别的同位素质谱分析方法,通过对比辛弗林样品二级碎片的重同位素比值与标准品二级碎片的重同位素比值之间的差异,建立OPLS-DA模型来判断减肥类保健品中辛弗林的来源。在OPLS-DA模型中,样本总预测准确率接近99%,可以实现对保健品实际样本中辛弗林的溯源研究。与常规方法相比,本方法准确率高、灵敏度高、操作简便,可以有效为安全监管提供技术支撑,提升食品质量安全水平,促进食品行业高质量发展。
Abstract
Synephrine is a compound that naturally occurs (endogenous) in certain foods or raw materials, but can also be artificially and illegally added (exogenous). The lack of a rapid and efficient method to distinguish between endogenous and exogenous sources of synephrine has blurred the line between legal and illegal addition of this compound. To enable accurate identification of illegal or excessive addition of synephrine, this study developed an isotopic mass spectrometry method to differentiate between synthetic and naturally derived synephrine. By comparing heavy isotope ratios of secondary fragments in synephrine samples with those of reference standards, an OPLS-DA model was established to determine the source of synephrine in health products. The overall prediction accuracy of the model reached nearly 99%, enabling reliable traceability analysis of synephrine in actual samples. Compared with conventional methods, this approach offers high accuracy, sensitivity, and operational simplicity, effectively providing technical support for safety regulation, improving food quality and safety, and promoting the high-quality development of the food industry.关键词
