大蒜绿变色素结构的初步解析

Structural Analysis of Garlic Greening Pigments

本研究在对大蒜绿变色素分离纯化的基础上,通过液质联用、核磁共振和红外光谱分析等方法,对大蒜绿色素的结构进行了研究。结果表明:绿色素物质的分子量为527;初步确定绿色素的物质结构含有吡咯环、不饱和键和甲基;红外光谱分析显示,绿色素物质含有-CH3、-OH 、C=C和C=S,属于芳香族杂环化合物,推测是含N的吡咯衍生物。

he structure of the green pigment was analysed by liquid chromatography-mass spectrometry (LC-MS), nuclear magnetic resonance(NMR) and infrared spectrum. The results presented that the molecular weight (MW) of the green pigment was 527; it can be initially confirmed that the pigment contains pyrrole ring, unsaturated bond and methyl; infrared spectrum analysis indicated that the green pigment contains -CH3, -OH , C=C and C=S. The green pigment belongs to aromatic heterocyclic compounds, which were inferred to be pyrrole derivatives that containing N.
