为建立直观有效的阿胶优劣鉴别方法,本文以正品阿胶DEEJ为对照品,分析对比市场上10个品牌14个阿胶样品的基本成分和表观特性(黏度、色差和不溶率)。结果表明,市场上阿胶的水分含量(10.24%-12.80%)和总氮含量(13.00%-16.69%)均符合中国药典规定,其中3个品牌阿胶的总氮较低(≤14.17%),2个品牌阿胶的总氮较高(≥16.12%)。在表观特性上,正品阿胶DEEJ的非牛顿指数更接近1(≥0.92),黏度较小(≤9.39 mPaos),溶解性好,不溶率仅为2.94%,粉末和溶液的颜色呈现浅黄色。与正品阿胶DEEJ相比,1号和4号系列样品的表观特性与DEEJ较为接近,其余样品与DEEJ存在较大差异。其中2、5、10号系列阿胶溶液表现出较小的非牛顿指数和较大的黏度(≥17.71 mPaos),溶液和粉末的颜色为深红色;2、3、5号阿胶的溶解性较差,其中,2-b黏度很大,溶解后产生溶胀物,经检测其单糖组成,发现葡萄糖含量是DEEJ-a的三倍,未检测到果糖,因此很可能该样品添加了增稠作用的物质;7、8号阿胶的粉末和溶液颜色较浅。消费者可根据阿胶黏稠度、溶解性和颜色来初步判断阿胶的品质。

Fourteen kinds of Asini Corii Collas (ACC; donkey glue) on the market in comparison with authentic ACC were evaluated for proximate composition, rheological property, color and insolubility to establish an intuitive and effective evaluation method. The result showed that moisture content (10.24%-12.80%) and total nitrogen content (13.00%-16.69%) of all the samples meet the standard of ChP. Products from 3 of the brands had less total nitrogen content (≤14.17%) while those from the other 2 brands had higher total nitrogen content (≥16.12%). The authentic ACC had non-Newtonian index closer to 1 (≥0.92), lower viscosity (≤9.39 mPaos) and better solubility (rate of insoluble is only 2.94%) with light yellow color. The samples No.1 and No.4 had a similar apparent properties with authentic ACC while the others had a great difference from authentic ACC. Among them, the samples of No.2, No5 and No.10 showed lower non-Newtonian index and higher viscosity (≥17.71 mPaos) and the color of the powder and solution showed dark red. The samples of No2, No.3 and No.5 had bad solubility especially the sample of 2-b which showed large viscosity (322.51mPaos) and appeared jelly when being dissolved. The monosaccharide composition demonstrated that the glucose content of 2-b was three times as much as DEEJ-a and there was no fructose in 2-b sample. Therefore thickener was likely to be added in it. The powder and solution of samples No.7 and No.8 had a lighter color than authentic ACC. Consumers could identify the high quality ACC according to the apparent properties such as viscosity, solubility and color.?
