适宜晋中地区种植的彩色马铃薯品种营养品质分析与评价
Nutritional Quality Analysis and Evaluation of Color Potato Varieties Suitable for Planting in Jinzhong Area
为明确红玫瑰和黑金刚两个彩色马铃薯品种的营养品质,以荷兰15号为对照、适宜晋中地区栽培的2个彩色马铃薯品种为试验材料,分析测定并评价质量参数(单薯重、薯块形状、表皮颜色、薯肉颜色、芽眼深浅、芽眼个数)和营养参数(干物质、淀粉、可溶性蛋白质、花青素、黄酮的含量及抗氧化能力)指标。结果表明:红玫瑰表现为红皮红肉,黑金刚为紫皮紫肉,二者单薯重均高于荷兰15号,芽眼个数较少且较浅;两个彩色马铃薯品种的营养物质含量均明显高于荷兰15号,其中黑金刚的淀粉、花青素、黄酮含量和抗氧化能力高于红玫瑰。综合比较,红玫瑰和黑金刚两个适宜晋中地区栽种的彩色马铃薯品种品质良好、营养价值较高,在丰富晋中地区马铃薯的种植资源方面具有较大的开发利用空间。
In order to determine the nutritional quality of the two color potato varieties Hongmeigui and Heijingang, two color potato varieties suitable for cultivation in Jinzhong area were used as experimental materials with Holland No. 15 as the control. Their quality parameters (single potato weight, potato shape, skin color, flesh color, depth and number of bud eyes) and nutritional parameters (contents of dry matter, starch, soluble protein, anthocyanin, flavonoids and antioxidant capacity) were analyzed and evaluated. The results showed that the Hongmeigui showed red skinNutritional Quality Analysis and Evaluation of Color Potato Varieties Suitable for Planting in Jinzhong Area and red meat, and the Heijingang showed purple skin and purple meat. The single tuber weight of both of them was higher than that of Holland 15, and the number of bud eyes was less and the depth was shallow. The nutrient contents of the two potato varieties were significantly higher than that of Holland 15, and the contents of starch, anthocyanin, flavonoids and antioxidant capacity of Heijingang were higher than those of Hongmeigui. According to the comprehensive comparison, the two varieties of color potato suitable for planting in Jinzhong area have good quality and high nutritional value, and have a large space for development and utilization in enriching potato planting resources in Jinzhong area.
