不同包埋方式对叶黄素稳定性的影响

叶黄素是一种具有多种生理功能的天然色素,但由于在光照和有氧气条件下的不稳定性,大大限制了其在食品工业上的应用。本文采用喷雾干燥技术和复合凝聚技术分别制备了两种叶黄素微胶囊,并对它们的理化性质及稳定性进行了研究。结果表明微胶囊技术对提高天然色素的稳定性具有显著作用,并且复合凝聚法制备的叶黄素微胶囊在包埋效果、热稳定性及水中释放稳定性方面均优于直接喷雾干燥法制备的叶黄素微胶囊。
Lutein is a kind of natural pigment which possesses varied physiological functions.However,due to its instability under the conditions of light and oxgen, its application in food industry has beeen restrained largely. In this paper, two kinds of microencapsulation tehnology were employed, including spray-drying and complex coacervation.The corresponding two types of Lutein microcapsules were compared by their spwcific physicochemical properties and stability. The results showed the technology of microencapsulation played an important role in improving the stability of Lutein. Furthermore, considering the encapsulation efficiency, the thermal stability and water stability, the microcapsules perpared by complex coacervation were better than the other sray-dried microcapsules.
