摘要:燕麦是谷物中最好的全价营养食品,不仅含有较高的蛋白质、脂肪,而且含有较高的可溶性膳食纤维和其他营养成分。其营养价值及医疗保健价值愈来愈为世人所重视.研究改善燕麦食品的口感,综合利用燕麦的各部分,加工成各种功能性保健食品是很有意义的工作。本文阐述了燕麦籽粒的营养价值,医疗作用以及其他作用,并对其国内外开发现状和前景做了阐述,为燕麦食品加工和开发提供依据和研究方向。
bstract:Oats is a kind of food which has all sorts of nutrition. Not only includes a higher protein, the fat, but also contain the higher soluble meal fiber and other nutrient components. Its nutritive value and medical treatment and health care value are paid attention to more and more by common people.It was very significance to study the improving of the food flavor,utilizing all the parts of the oats,and processing the functional foods.In this article,nutrition value,medical effect,internal and external development situation and prospect oats were expounded so as to provide the basis and research direction for oats deeply processing and scientific and technological developing.
