马蹄多糖的提取工艺及其抗氧化性的研究

Study on extraction and antioxidation of polysaccharides from water chestnut

本文以马蹄为原料,利用单因素实验和正交试验对多糖提取条件进行了研究,并分别采用普鲁士蓝法测定还原力和水杨酸法测定其羟自由基清除能力,对马蹄多糖的抗氧化性进行检测。实验结果表明:马蹄多糖最佳提取工艺参数为600 W微波功率,1:15料液比,3 min的提取时间,在此条件下提取马蹄多糖提取率可达8.12%,提取所得马蹄多糖纯度达83.2%。马蹄多糖有较强的还原力,与抗坏血酸相当,对羟自由基有较强的清除能力,马蹄多糖在0.1 mg/mL浓度时,羟自由基清除率达到46.18%。

he water chestnut as raw material, the extraction conditions of polysaccharide were studied by single factor and orthogonal experiment, antioxidant activity on polysaccharide from water chestnut was detected respectively by Prussian blue method determination on reducing power and salicylic acid method determination on the hydroxyl radical scavenging ability. The results showed that extracting process of polysaccharidefrom water chestnut had microwave power of 600 W, 1:15 at the solid-liquid ratio, extracting time of 3 min, under these conditions, the extraction rate of polysaccharide could reach 8.12%, the polysaccharide purity could up to 83.2%. The polysaccharide from water chestnuthad strong reduction powerand scavenging ability to hydroxyl radicals, and the removal rate of hydroxyl radical reached 46.18% when the concentration of polysaccharide was 0.1 mg/mL.
