针对当前冷却羊肉颜色检测过程中存在的接触式和有损的问题,利用高光谱图像技术对真空包装冷却羊肉储存过程中的亮度(L*)、红度(a*)、黄度(b*)和色差(e*)进行检测研究。选取具有代表性的羊背脊肉共140个样品作为试验材料,采集样品的高光谱图像信息,并对样品的颜色参数(L*、a*、b*和e*)进行试验测定。经光谱提取和预处理后,采用全波段和经过遗传算法(GA)提取的有效波段分别建立各颜色参数的偏最小二乘回归(PLSR)模型。结果表明,通过GA提取有效波段建立的PLSR模型优于通过全波段建立的PLSR模型,对于L*、a*、b*和e*,校正集相关系数(RC)分别为0.98、0.92、0.83和0.93,校正集均方根误差(RMSEC)分别为0.87、0.61、0.97和0.11,预测集相关系数(RP)分别为0.98、0.90、0.77和0.87,预测集均方根误差(RMSEP)分别为0.93、0.67、1.10和0.15。高光谱图像技术能够无损地检测真空包装下不同储藏时间的羊肉颜色。

s for the current problems of contact and destruction existed in the processing of chilled lamb color detection, the hyperspectral imaging technique was used for detecting the parameters of vacuum-packed lamb at the chilled storage, which are lightness (L*), redness (a*), yellowness (b*) and color (e*). A total number of 140 representative samples of lamb spine were collected as the test material in the study, their hyperspectral imaging information was obtained, and the color parameters (L*, a*, b*and e*) of these samples were also determined. After spectral extraction and preprocessing, partial least squares regression (PLSR) models of all color parameters were established on the whole bands and the characteristic bands obtained from genetic algorithms (GA) separately. The results showed PLSR models established on GA characteristic bands were better than those on the whole bands. As for L*, a*, b* and e*, the correlation coefficients of calibration set (RC) were 0.98, 0.92, 0.83 and 0.93, and root mean square errors of calibration set (RMSEC) were 0.87, 0.61, 0.97 and 0.11, respectively. The correlation coefficients of prediction set (RP) were 0.98, 0.90, 0.77 and 0.87, and root mean square errors of prediction set (RMSEP) were 0.93, 0.67, 1.10 and 0.15, respectively. The hyperspectral imaging technique can quickly and nondestructively detect the color parameters of vacuum-packed chilled lamb at different storage time.
