Study on the partition and stability of resveratrol in the emulsions containing different oils and stabilized by whey protein isolate/gum Arabic

本文利用热变性乳清分离蛋白(hWPI)及其与阿拉伯胶复合物(hWPI-GA)稳定不同油脂O/W型乳状液,对白藜芦醇进行包埋和保护。通过表征乳状液的结构及白藜芦醇的分配和稳定性,探究油脂类型以及阿拉伯胶对hWPI乳状液及其中包埋的白藜芦醇的影响。结果表明,hWPI稳定的不同油脂乳状液液滴粒径和界面蛋白含量差异显著;葵花籽油、鱼油、牛至精油、薄荷精油乳状液对白藜芦醇的总包埋率依次为:69.06%、83.75%、48.10%、98.24%,而且分布不同;白藜芦醇的储藏稳定性在鱼油乳状液中最差,在薄荷精油乳状液中最好。加入阿拉伯胶后,所有乳状液粒径和电位绝对值增大,白藜芦醇在牛至精油和薄荷精油乳化油滴中相对含量以及鱼油乳状液中总包埋率增加,在牛至精油乳状液中白藜芦醇的稳定性增加。

Oil-in-water emulsions containing different oils were stabilized by heat-denatured whey protein isolate (hWPI) and its gum Arabic complexes (hWPI-GA) for the encapsulation and protection of resveratrol. Structure of the emulsions was characterized and partition and stability of resveratrol were analyzed to investigate the impact of oil type and GA addition on hWPI-stabilized emulsions and encapsulated resveratrol. The results showed that the droplet size and interfacial protein content of hWPI-stabilized emulsions were significantly deStudy on the partition and stability of resveratrol in the emulsions containing different oils and stabilized by whey protein isolate/gum Arabicpendent on oil type. Total encapsulation efficiency of resveratrol in sunflower oil, fish oil, oregano essential oil, and peppermint essential oil emulsions were 69.06%, 83.75%, 48.10%, 98.24%, respectively. Partition of resveratrol in the emulsions were different. Storage stability of resveratrol was the worst in fish oil emulsions but the best in peppermint oil emulsions. The presence of GA increased size and absolute value of ζ-potential of all emulsions, the content of resveratrol in emulsified oregano essential oil and peppermint essential oil droplets and total encapsulation efficiency in fish oil emulsion, and storage stability of resveratrol in oregano essential oil emulsions.
