蛋清源抗氧化肽CDQ与YNW之间的协同抗氧化作用研究

本文主要研究了蛋清源抗氧化小肽CDQ(Cys-Asp-Gln)与YNW(Tyr-Asn-Trp)之间的协同抗氧化作用，分别利用DPPH自由基清除率、ABTS自由基清除率、ORAC吸附能力和FRAP铁离子还原能力4项指标考察了CDQ和YNW单独作用及协同作用时的抗氧化能力，结果发现，在考察的4个体系中，蛋清源抗氧化小肽CDQ与YNW均表现出一定的协同抗氧化能力。
he objective of paper was to investigate the synergetic effect of egg white-derived antioxidant ppeptide CDQ (Cys-Asp-Gln) and YNW (Tyr-Asn-Trp). The antioxidant activity of CDQ or YNW alone and together were determined by DPPH free radical scavenging activity, ABTS free radical scavenging activity, ORAC activity and FRAP activity assay. Results showed that significant synergetic effects were observed between this two antioxidant peptides in four evaluating systems of antioxidant activity.
