本文以甜橙油为芯材,壳聚糖为壁材,通过喷雾干燥的方法制备得到粒径小于20μm表面平滑,形态呈球状的微胶囊粉末。通过测定乳状液的稳定性评价了Tween类,Span类,脂肪酸蔗糖酯与单甘脂类乳化剂的使用情况,系统探讨了乳化剂种类与用量,喷雾干燥条件,芯壁比对于微胶囊化效果的影响。结果表明,乳化剂为Tween40与Span20为 4:1的比例复配时形成的乳状液最稳定。甜橙油与壳聚糖的比例为1:2,乳化剂添加量为5%(甜橙油中),喷雾干燥时选用进口温度为150℃,所得到的壳聚糖微胶囊产品质量较好,包埋率最佳达到93.9%,为理想的产品。

Chitosan is an ideal microencapsulation material because it is a biodegradable natural polymer without toxicity. In this research,orange oil was encapsulated in chitosn using the method of spray-drying. A powered product was obtained containing microcapsules with a diameter below 20μm having a smooth and spherical surface.The stability of the emulsions is evaluated by the emusifying effectiveness of single emusifiers such as Tween,Span,sucrosestersand monoglyceride including their co-emusifiers in orange oil.The add content of the emulsifiers, the conditions of spry-drying and the ratio of chitosan and orange oil is researched in system to determine the best process of microencapsulation. Results shows that the optimum co-emulsifiers are Tween40 and Span20 and their ratio is 4:1. Followed are the best spry-drying conditions:the emusifiers is 0.5% in orange oil(W/W),the ratio of chitosan and range oil is 2:1(W/W), the inlet temperayure is 150℃.In that conditons,the encapsulationed ratio of the powder is 93.9%.
