花色苷是天然的水溶性食用色素,具有抗氧化、调节血脂、抗衰老等方面的功能,有着巨大应用潜力。黑果枸杞主要分布于我国西北地区,其浆果中花青素含量很高,具有较高的药用和保健价值。本文综述了近年来在黑果枸杞花色苷提取纯化、定量检测分析方法以及生理功能等方面的研究进展,为进一步开展黑果枸杞花色苷研究,及深入开发利用黑果枸杞资源提供参考。

nthocyanins have functions such as antioxidant, regulating blood lipids, anti-aging and so on, which are natural water-soluble food coloring, have huge application prospects. Lycium ruthenicum Murr.is one of plant species which spreads in northwest of China, cantains rich of anthocyanin within its fruits. This review will focus on the extraction and purification from Lycium ruthenicum Murr, quantitative detection methods and physiological functions of anthocyanins, to provide a scientific basis for researching and developing anthocyanins of Lycium ruthenicum Murr. as an active ingredient, exploiting and utilizing Lycium ruthenicum Murr. resource for further.
