臭氧处理对呕吐毒素污染小麦品质影响
Effect of ozone treatment on deoxynivalenol and the quality of wheat
本文研究了脱氧雪腐镰刀菌烯醇(DON)在小麦籽粒中的分布,臭氧处理对小麦中DON的降解效果,以及臭氧处理对DON污染小麦品质的影响。结果表明,DON毒素主要集中在麦粒的皮层部位,并呈现出从外向内逐渐减少的趋势;DON污染小麦经75 mg /L臭氧处理30、60、90min,DON降解率分别为26.40%、39.16%、53.48%,臭氧处理有助于提升小麦粉的亮度和白度,改善小麦粉色泽(P < 0.05);对小麦粉的蛋白质、淀粉含量、淀粉结构、脂肪酸值和氨基酸含量影响较小(P > 0.05)。
In this study, the distribution of DON in the wheat kernel and the effect of exposure time on DON detoxification were investigated. It was found that a higher concentration of toxin in the outer part of the kernel and the injection of DON is from the outside to the inside. The degradation rates of DON were 26.40%, 39.16% and 53.48%, respectively after samples were exposed to 75 mg /L ozone gas for 30, 60 and 90 min. The wheat flour quality and nutrition changes caused by ozonation were also evaluated in this research. No significant differences (P > 0.05) were found in the protein content, fatty acid value, amino acids, starch content, carbonyl and carboxyl content, and swelling power of ozone treated samples.
