目的] 旨在评估我国食用菌污染物(重金属和放射性物质)、微生物限量、食品添加剂使用控制水平,打破或跨越技术性贸易壁垒。[方法] 比较分析 GB 7096-2014食用菌及制品中引用的GB 2762--2017食品中污染物限量、GB 2760--2014食品添加剂使用标准、GB 29921-2021预包装食品中的致病菌限量和GB 14882-1994食品中放射性物质限制浓度标准与CAC和欧盟、美国、日本、韩国食用菌及类似产品重金属、放射性物质、微生物和食品添加剂种类及限量差异和特征。[结果] 我国食用菌和/或蘑菇(鲜)重金属残留控制种类多于CAC和欧美日韩标准,相同的重金属限量宽于其标准;放射性污染限量严于CAC和欧美日韩标准;微生物种类多于CAC、欧美日本,少于韩国标准,相同微生物其限量值一致;食品添加剂使用标准差异较大,鲜或冷却食用菌不得使用食品添加剂,严于CAC和欧美日韩。[结论]食用菌中重金属和放射性物质污染、致病性微生物、食品添加剂使用标准与进口国家和CAC标准在种类及限值差异较大,出口食用菌应满足进口国家要求,保障其出口安全和促进食用菌产业高质量发展。

[Objective] To evaluate the control level of heavy metals and radioactive substances, microbial limit and food additives in edible fungus and break or cross technical trade barriers. [Methods] Comparative analysis GB 2762--2017 limit of pollutants in food, GB 2760--2014 Standard for the use of food additives,GB 29921-2021 limited number of pathogenic bacteria in prepackaged foods as cited by GB 7096-2014 edible fungi and their products, and GB 14882-1994 standard for concentration limit of radioactive substances in food with CAC, EU, USA, Japan, Korea standard on heavy metal, radioactive substance, pathogenic microorganisms and food additives in mushrooms and other similar edible fungi. [Results] Heavy metal control species in Chinese edible fungi and/or mushrooms(fresh)are more than CAC and Europe, Japan and Korea standard, the limit of same heavy metal in our country is wider than their standards; The limit of radioactive substances pollution is less than CAC and Europe, Japan and Korea standard; Microorganism species is more than CAC, Europe, America and Japan, less than Korean, the same microorganism species are same limits; Food additive used standard are difference between CAC, Europe, America and Japan, less than Korean, fresh or frozen edible fungi shall not use food additives in GB2760-2014. They are strict than CAC and Europe, America, Japan and South Korea. [Conclusion] Standards for the item and limit of heavy metal, radioactive pollution, pathogenic microorganism and food additives of edible fungi are quite different from the imported countries and CAC standards. Export edible fungi should comply with the requirements of the imported countries standard for ensuring the export safety and promoting the high-quality development of the edible fungus industry.
