还原后大豆球蛋白胃酶酶解物巯基含量与生物活性关系
Relationship between thiol content and bioactivity of reduced glycinin hydrolysates obtained by pepsin
本实验通过封闭不同的游离巯基含量,研究了还原后大豆球蛋白胃酶酶解物的巯基含量与DPPH自由基清除率、铁还原能力及螯合并还原铁能力的定量关系,研究结果表明巯基含量与DPPH自由基清除率、铁还原能力、螯合铁及螯合并还原铁能力之间存在线性关系;另外,相同巯基含量下,还原后大豆球蛋白胃酶酶解物具有优于GSH的胰蛋白酶抑制剂钝化能力。
In this paper we mainly studied the quantitative relationship between thiol content and clear rate to DPPH ferric ion, reducing antioxidant capacity, ferrous ion chelating and reducing capacity, we found that there are linear relationships between thiol content and them, in addtion, we came to a conclusion that reduced glycinin hydrolysates obtained by pepsin has better inactivation of trypsin inhibitor compared with GSH.
