高压脉冲电场食品非热加工技术在食品的处理和加工领域具有广泛的应用前景。该技术在杀灭微生物方面具有很好的效果。同时在保持食品口感和营养物质方面较传统的加热杀菌技术更有优势;与此同时,该技术还应用在食品酶钝化、细胞内物质提取等方面,备受人们关注。在高压脉冲电场技术研究中,满足杀菌要求的脉冲电源是研制工作的重要的基础工作。本文总结了清华大学开发的高压脉冲电场系统,分析了脉冲电源的电路结构及处理室的形式设计,并对高压脉冲电场系统在液态食品处理领域的应用研究进行综述

Pulsed electric fields(PEF) is one of the most relevant nothermal food preservation processes because of its potential to inactivate microorganisms without altering sensorial and nutritional properties of foods. PEF technology has similar effectiveness with traditional thermal pasteurization, while better results in nutrient preservation. Besides, this technology is also applied in enzymatic inactivation, intracellular substance extraction. This paper summarized generations of pulsed electric field systems developed by Tsinghua University. The circuit configuration of typical pulsed power generators and design of treatment chambers were analysed. Relevant application researches of these systems in food processing were discussed.
