食品原料辅助降脂减肥配方的确定

本研究旨在对8种食品原料进行筛选并进行复配,得到具有较好降脂减肥效果的复配配方。以食品原料提取液对脂肪酶的抑制率为评价指标,筛选出3种对脂肪酶活性抑制具有较强作用的原料,利用单形重心设计进行配方优化设计。结果:筛选得到的3种原料为荷叶、桑叶和玉米须,优化获得的最优配方为:荷叶占0.608,桑叶占0.186,玉米须占0.206。最优配方对脂肪酶的实际抑制率为(50.77±1.74)%,与响应面回归方程的预测值相近,说明该回归模型能够对配方进行较好的分析和预测。该研究以期为开发辅助降脂减肥的减肥食品提供理论依据,有利于提高荷叶、桑叶、玉米须等资源的利用。
he purpose of this study was to screen and compound 8 kinds of food raw materials to obtain a compound formula with good lipid-lowering and weight-reducing effects. Taking the inhibition rate of food raw material extract on lipase as the evaluation index, three kinds of raw materials with strong inhibition effect on lipase activity were selected, and the formula optimization design was carried out by using the simplex center of gravity design. The three raw materials were lotus leaf, mulberry leaf and corn silk. The optimal formula was lotus leaf 0.608, mulberry leaf 0.186 and corn silk 0.206. The actual inhibition rate of the optimal formula on lipase was (50.77±1.74)%, which was close to the predicted value of the response surface regression equation, indicating that the regression model could better analyze and predict the formula. This study aims to provide a theoretical basis for the development of weight loss foods that assist in lipid-lowering and weight loss, and to improve the utilization of lotus leaves, mulberry leaves, corn silk and other resources.
