酶解处理对马铃薯渣理化性能的影响
Studies on physicochemical properties of potato pulp with enzyme treatment
马铃薯渣是马铃薯淀粉生产过程中的副产物。本文研究了酶解马铃薯渣对残余的淀粉和纤维素的影响,考察其作为饲料添加组分的可行性。扫描电镜分析发现薯渣经过酶解后,结构松散,且在酶解前后表现出不同的理化性质。酶解后其阳离子交换能力、纤维素转化率、膨胀力、持水力和持油力均有所提高,乳化性和乳化稳定性也较高。利用傅里叶变换红外光谱仪(FTIR)和X射线衍射仪(XRD)研究了酶解前后马铃薯渣的化学组成和结晶性,结果表明酶解后薯渣的纤维素本质没有变化。
Potato pulp is one of the main by-products during potato starch processing. Enzymatic hydrolysis and functional properties of starch and fiber from potato pulp were evaluated in order to examine the feasibility in feed additive. Scanning electron microscope showed that enzymolysis made the struture looser. Therefore, different functional properties were shown in these samples. Higher values of ion exchange capacity, cellulose conversion ratio, expansibility, water- and oil- holding capacities were found in potato pulp after treatment by enzyme. And that higher emulsifying activity with high emulsion stability was shown in hydrolyzed potato pulps. The chemical composition and crystalline structure of potato pulps of different treatemnt were studied by FTIR and XRD, the results showed that the hydrolyzed potato pulps did not change compared with that of untreated.
