固形物与甘油含量对胶原团及胶原蛋白肠衣膜的影响
Effect of collagen and glycerol contents on properties of collagen pastes and collagen casing films
本研究主要考察了胶原团固形物含量、甘油添加量对胶原团及胶原蛋白肠衣性能的影响,并探究了胶原团的流变、质构特性与胶原肠衣膜机械特性的相关性。研究表明,胶原团固形物含量对肠衣膜性能影响巨大,合适的固形物含量可使胶原蛋白肠衣拥有较好的机械性能。随着甘油添加量的增加,肠衣膜的抗拉强度下降,断裂延伸率明显上升,肠衣膜溶胀程度降低。随着胶原团凝胶强度的增大,其制得的肠衣膜抗拉强度也会增加,但不呈线性相关。最终筛选出的配方为:固形物含量5 %,甘油添加量20 %,此时胶原蛋白肠衣膜的机械性能最好。本研究可为胶原肠衣生产中固形物含量、甘油添加量的选择提供参考。

Research indicated that the content of collagen pastes has great influence on the performance of casing casing film, the suitable solid content made collagen casingfilm own better mechanical properties. With the increase content of glycerol, tensile strength decreased, the elongation increased and swelling degree also decreased. With the increase of collagen pastes gel strength, tensile strength of collagen film will increase, but it is not linear. The final screening formula was: 5% solid content, 20% glycerol, the mechanical properties of collagen casings were best at this formula.
