在50℃,pH=4.65-13.00条件下,采用乙酸酐与大豆分离蛋白反应制备了一系列乙酰化大豆分离蛋白(ASPI)聚合物,并用茚三酮比色法确定了乙酰化度。采用红外、紫外、电导率滴定等测试方法对乙酰化产物进行了表征。结果表明,茚三酮比色法和电导率滴定法具有可比性;酰化反应时的pH值和乙酸酐的用量对SPI的酰化度有很大的影响; ASPI的优化制备条件为pH=12,反应时间60-80min,此条件下的 ASPI等电点降到3.0;室温下ASPI的溶解度提高到3.84g。此乙酰化大豆分离蛋白聚合物可期望进一步用于分子印迹聚合物的研究。

cylated soybean protein isolated(ASPI) polymer was prepared by using acetic anhydride and soybean protein isolated at 50 while pH changed between 4.65 and 13.00. The℃ degree acylated was determined by the ninhydrin-colorimetry method. The product polymer was characterized with UV, IR and conductivity-titration method. The results showed that the optimization of this preparation was that the pH12 and reacted for 60-80 minutes. The isoelectric point of ASPI turned from 4.5 of SPI to 3.0 and the solubility increase from 0.385g to 3.84g. It will be expectative as the macromolecular imprinting matrix.
