涪陵榨菜是中国重要的农业传统产品。本文对10家出口涪陵榨菜企业的产品类型和包装类型进行分析,工业化生产与传统工艺相结合,加上不同的风味,构成涪陵榨菜成品的多样化,复杂化。涪陵榨菜包装材料主要有4种即土陶坛、玻璃、金属(马口铁)、高分子材料(塑料),榨菜类型包括传统榨菜,改形榨菜包括高盐、中盐和低盐三类。分析了包装材料的安全风险因子,以化学性为主,包括重金属、添加剂和材料单体。提出了涪陵榨菜包装安全控制问题和研究方向。

Fuling mustard is an important agriculture traditional products in China. In this paper, type of Fuling mustard product and packaging were analysed in 10 Fuling mustard export enterprises. Industrial production combined with the traditional process, coupled with a different flavor and weights, finished Fuling mustard product is diversification, complicated. There are four kinds of packaging materials such as Tutao altar, glass, metal (tinplate), polymers (plastic) and three mustard types such as traditional mustard and reshaping,The later include high,middle and low salt content mustard. Safe and risk factors of packaging materials are mainly the chemical, including heavy metals, additives and monomers materials. Safety control methods in Fuling mustard packaging are suggested.
