二花脸与皮特兰猪相比,肌肉具有较高的肉质评分,表现为显著低的pH45min,pH24h(p < 0.01),较高的肉色评分以及较高的保水性(p < 0.05)。两品种肌肉在能量代谢方面存在显著差异。二花脸肌肉中CK,LDH的活性极显著高于皮特兰,AMPK的活性极显著低于皮特兰(p < 0.05)。PGC-1α mRNA的表达水平品种间差异不显著。结果提示,二花脸与皮特兰不同的肌肉品质可能与品种间不同的肌肉能量代谢模式有关。

In the present study, Erhuanlian exerted excellent meat quality traits compared with Pietrain, indicated by significantly lower pH45min, pH24h (p < 0.01), better meat color and water holding capacity (all p < 0.05). Significant differences regarding metabolic characteristics between breeds were also detected. Erhualian had significantly higher CK, LDH and lower AMPK activities (all p < 0.01)in comparison with Pietrain, but another key factor in muscle energy metabolism, PGC-1α, its transcriptions didn’t shown significance between breeds. Results suggested that distinct metabolic pattern might make a great contribution to breed specific meat quality.
