淡水鱼的高效低碳加工技术研究进展

随着人们对健康生活的追求,低脂高蛋白的水产品的需求量日益增长,如何高效低碳地利用我国丰富的淡水鱼资源,并提高其品质是近几年来研究人员主要关注的课题。研究内容主要涉及到低值鱼的增值,下脚料的废物利用和环境的保护,以及新的加工技术的发展。本文就这三个方面做了归纳总结。

he demand of aquatic products with low fat and high protein content is increasing as a result of people's pursuit for healthy life; thus, how to utilize freshwater fish efficiently, low-carbonly has been the major topic of resent researches which include the aquatic product processing research focused on how to make fish value-added and how to reutilize the waste as to protect the environment, the development of innovative processing technology is also concentrated on. In this paper, three aspects mentioned above were summarized.
