GGE技术分析福矛高温大曲的细菌菌落结构

利用PCR-DGGE方法分析了福矛高温大曲中细菌微生物群落的16s rDNA V3可变区,结果显示发现随着大曲储存时间的增加,细菌群落结构发生了一定的变化,主要表现在微生物多样性的减少,以及部分优势菌群的迁移,这种结构的变化与曲房以及高温大曲微生态环境有密切关系。

he 16s rDNA V3 variable regions of bacterial community from high temperature FuMao Daqu were anaylsed by PCR-DGGE method. The results showed that bacterial community structure changed in the course of Daqu storage. The descending of microbial diversity and the transfer of some dominant bacterial community have taken place. These bacterial community structure changes are related with qu-making plants and high temperature Daqu micro-ecological environment.
