罗伊氏乳杆菌(Lactobacillus reuteri)是一种安全、高效生产罗伊氏细菌素的菌株。本文优化了罗伊氏乳杆菌ATCC 53608转化甘油生产罗伊氏细菌素的工艺参数。结果表明:处于初期稳定期(26 h)的L. reuteri,其细胞内甘油脱水酶能达到最大酶活2.2 U/mg,有利于转化甘油生产罗伊氏细菌素。正交实验优化后的最佳生产工艺:甘油浓度 400 mmol/L, 接种量110 g/L,酶转化时间2 h,转化温度30℃,pH 6.2。优化后罗伊氏细菌素的平均产量达到241.2±3.4 mmol/L。

Lactobacillus reutrei can product reuterin with safety and high efficiency. The objective of present study was to investigate the optimal conditions on the biotransformation of glycerol to enhance the yield of reuterin. The biotransformation conditions were optimized by orthogonal tests as follows: glycerol concentration 400mmol/L, cell concentration 110 g/L, conversion time 2 h, temperature 30℃ and pH 6.2. An average yield of reuterin was 241.2±3.4 mmol/L under optimal conditions.
