工业化生产的金针菇Cr和Al污染监测与健康风险评估

目的] 旨在为工业化生产的金针菇食用安全提供科学依据。[方法] 2022年6月--2023年5月,以重庆华绿生物有限公司生产的金针菇为研究对象,应用食品安全国家标准食品中多元素的测定第一法电感耦合等离子体质谱法(ICP-MS法)测试金针菇和杀菌后培育用基质中的Cr和Al污染状态,分析其变异系数、单因子污染指数、多因子污染综合指数、进行健康风险评价、富集系数、主要危害与风险预警研究。[结果] 36批金针菇Cr和Al测试,C和Al检出率分别为5.56%和8.33%,Al污染率高于Cr。Cr和Al变异系数为6.47和8.38%,Cr和Al单因子污染指数和多因子污染综合指数均<0.7,显示未受污染。Cr 成人污染指数THQ和TTHQ、Al成人污染指数THQ均<1,对成人人体健康无明显影响,Al 儿童污染指数THQ和TTHQ值>1,存在健康风险。Cr富集能力高于Al,Cr污染量符合中国蔬菜、Al污染量符合欧盟食品限量要求,简要综述了Cr,Al污染值对人体健康的主要危害。[结论] 重庆工业化生产金针菇Cr、Al未受污染,Cr符合中国蔬菜和Al符合欧盟食品限量要求,安全水平高,对成人人体健康无明显影响.
Objective] To provide scientific basis for the edible safety of flammulina velutipes in industrial production,[Methods] the contamination status of Cr and Al in the flammulina velutipes and cultivation substrate used for post-sterilization produced by Chongqing Hualu Biological Co., Ltd. from June 2022 to May 2023,with food safety national standards- first method of determination of multiple elements in food under inductively coupled plasma mass spectrometry(ICP--MS method),The coefficient of variation, single factor pollution index and multi--factor composite pollution index were analyzed, and the health risk assessment, enrichment coefficient, main hazards and risk alert were carried out. [Results] The detection rates of Cr and Al were 5.56% and 8.33% respectively in 36 batches of Flammulus revolutus. Al had the highest pollution rate. The variation coefficients of Cr and Al were 6.47 and 8.38% respectively, and the dispersion of Cr was higher than that of Al. The single factor pollution index and the multi-factor pollution composite index are both < 0.7, which is the safe level and is not polluted. The adult pollution index THQ and TTHQ in Cr and the adult pollution index THQ in Al were all < 1, which had no significant effect on adult human health, and the pollution index THQ and TTHQ in Al children were > 1. Health risks to children were present. The enrichment capacity of Cr is higher than that of Al, and the pollution value of Cr meets the limit requirements of China vegetable and the pollution value of Al meets the limit requirements of EU food standards. The main harm of Cr and Al pollution value to human health is briefly reviewed. [Conclusions] Cr and Al in flammulina velutipes production by industrial in Chongqing is not polluted. Cr limit value meets the requirements of Chinese vegetable and Al limit value meets the requirements of European Union food. Flammulina velutipes has a high safety level, and has no obvious impact on adult human health.
