本文从饲用耐高温酶的作用机制，主要从饲用复合酶的分子内部结构，细胞膜的组分，蛋白质分子的复杂结构及遗传物质的稳定性角度阐明了饲用酶的耐高温机理。工业应用主要介绍了几种常见的饲用酶的应用，并对应用前景系统阐述了嗜高温酶的研究进展。
he thermostable mechanism of enzyme has been clarified from its function. Mainly from internal structure of compound enzyme, component of cell membrane, complex structure of protein and stability of genetic material. The industrial application mainly introduced several kind of common enzyme for feed uses, and elaborated research progress of high temperature enzyme from application prospect.
