粘质沙雷氏菌产红色素的稳定性研究

Investigate the stability of serratia rubidaea red pigments

本文对粘质沙雷氏菌所产红色素进行稳定性的考察。研究光照、温度、氧化剂、还原剂、pH、金属离子等对粘质沙雷氏菌红色素稳定性的影响。结果表明:温度对其稳定性影响不大,热稳定性好。 酸性环境中能保持较长的时间,碱性条件下则损失较大。紫外光对红色素有一定的影响,溶液在紫外灯下放置6h,色素的残存率为初始的33%。Na+对红色素的稳定性影响不大,Ca2+和Mg2+有使其增色的作用,Cu2+和K+对红色素有一定的破坏作用。红色素对双氧水比较稳定,还原剂有较好的保护作用。

The stablity of red pigments was studied on illumination, temperature, metal ion, pH, oxidant and reducing agent. The results showed that the red pigments solution was stable to temperture, pH 5-10, H2O2 and Na2SO3, but sensitive to ultraviolet radiation.
