添加脱支淀粉改进蜡质玉米淀粉膜性能的研究
Study on addition of debranched waxy maize starch to improve properties of waxy maize starch based film
制备高性能淀粉膜一般要求原料淀粉中含有较高比例的直链淀粉,支链淀粉被认为成膜性较差。本研究将支链淀粉含量超过99%的蜡质玉米淀粉与脱支蜡质玉米淀粉(DWMS)按一定比例混合,提高蜡质玉米淀粉成膜能力。研究了干膜温度为23℃时,蜡质玉米淀粉与DWMS混合比例及干膜湿度对膜性能的影响,利用光学显微镜,X-射线衍射仪和质构仪等对淀粉膜的性质进行测定。结果表明:添加DWMS的蜡质玉米淀粉膜存在相分离。随着干膜湿度的增加,淀粉膜结晶度增大,拉伸强度(TS)增大,断裂伸长率(E)降低,水蒸气透水率(WVP)降低。DWMS添加量由0%增加到15%时,淀粉膜结晶度增大;添加量增加至25%时,结晶度下降;添加量为35%时不能成膜。淀粉膜结晶度与TS高度正相关(r=0.902),与E高度负相关(r=-0.809)。干膜湿度为85%、添加15%DWMS淀粉膜综合性能最佳:相比于蜡质玉米淀粉膜,其TS增大了75.8%,E降低了49.1%,WVP降低了21.50%;相比于普通玉米淀粉膜,其TS增大了42.56%,E增加了11.4%,WVP降低了5.33%。
In this study, different proportions of debranched waxy maize starch (DWMS) were added to waxy maize starchs to improve properties of waxy maize starch based films. The effects of DWMS proportion and relative humidity (RH) in the film formation on the starch films properties were studied. The properties of the starch films were measured by light microscope, X- ray diffraction and texture analyzer. Phase separations were observed in mixed films by light microscope. With the increase of humidity, the film crystallinity and the tensile strength (TS) were increased, where as the elongation at break (E) and the water vapor permeability (WVP) were decreased. The crystallinity of starch film was increased when the DWMS addition was increased from 0% to 15%; but it was decreased when DWMS increased to 25%; and further increase of DWMS addition resulted the failure in film formation. The crystallinity of starch film was positively correlated with TS (r=0.902), and negatively correlated with E (r=-0.809). The best mixed starch film obtained in this study contains 15% DWMS and formed in 85% RH: compared to the best waxy corn starch films, its TS increased 75.8%, E reduced 49.1% and WVP reduced 21.50%; compared to the best normal corn starch films, its TS and E were increased 42.6%, and 11.4% respectively, while WVP was reduced 5.33%.
