本文在滚筒式真空脉动干燥机上研究了不同装料量(1000、1500、1800、2000和2200g)条件下胡萝卜丁的干燥动力学及模型拟合。试验结果表明:装料量对胡萝卜丁的干燥时间有显著影响。随着装料量的增加其达到相同含水率的干燥时间增长。装料量为1000g时胡萝卜丁只存在升速和降速两个干燥阶段,随着装料量的增加胡萝卜丁出现较平稳的恒速干燥段,当装料量达到2000g时胡萝卜丁的恒速干燥段出现较大波动。对应胡萝卜丁的升速、恒速和降速段其温度曲线分别存在升温、恒温和再升温段;装料量为1000~1800g时胡萝卜丁的前期干燥(物料湿基含水率≧25%时)过程可采用Page方程进行拟合,其拟合方程为:ln (-lnMR)=-7.042393761 -0.000729367m+ 1.562319834 ln t(R2 =0.993),模型拟合度较高。

Base on the drum pulse vacuum dryer, this paper investigated the drying kinetics and model fitting of the carrot cubes under different material quantities (1000, 1500, 1800, 2000 and 2200g). Results indicated that: the effect of material quantities on the drying time of carrot cubes was significant. With increasing the material quantities the drying time which the materials achieved the same moisture content increased. When the material quantityies was 1000g, the carrot cubes only had a rising rate drying phase and a falling rate drying phase, With increasing the material quantities the carrot cubes appeared a smoother constant drying rate phase, when the material quantities added to 2000g the constant drying rate phase of the carrot cubes appeared greater volatility. The surface temperature curves of the carrot cubes had increased, balance and second increased phases with the carrot cubes rising rate drying phase, constant drying rate phase and falling rate drying phase. When the material quantities between 1000g to 1800g and the moisture content of material≧ 25%,Page equation was used to fit the drying process of carrot cubes. The simulation equation is: ln (-lnMR) =- 7.042393761-0.000729367m + 1.562319834 ln t (R2 = 0.993). The goodness of model fitting was higher.
