HACCP体系在原料乳生产中的应用
Application of HACCP System in Raw Milk Production
摘要
针对国内乳品生产企业原料乳质量不高的现状,本文引入HACCP体系,通过对原料乳生产线上的每道工序进行危害分析,确定关键控制点,制定出HACCP工作计划表,并提出了相应的标准操作规程。研究表明,奶牛饲养、乳房清洁、贮存与运输、设备清洗、工作人员为原料乳生产中的关键控制点。Abstract
To solve the low qulity level of raw milk, a HACCP system was introduced to raw milk production.A schedule was made by analyzing working procedure in product line, conforming critical control point. The corresponding standard operation criterion was brought forward.The research indicates that raising cows,cleaning udders, reserve&transport, cleaning equipments, staffs are critical control points in the production of raw milk. 关键词
